I made meatballs and called it Tri-Meatball

So I walked to the meat section of Spar at Lekki and Okon (Somehow, became friends with this guy ‘cos I come a lot to buy meat) just rolled out some freshly minced beef, Chicken and Pork. Initial plan was to but just chicken, but suddenly had a wild idea. “Why not mix all meat together?”. It’s actually a tasty bite that melts in your mouth. The taste of the Chicken, the tenderness of the Pork/Mutton and finally the Beef that holds everything together.

You can either deep fry it or broil in an oven. I prefer using the oven because it keeps in all the juices, the exterior is not so brittle and less fat content because of the oil used to fry it. The breadcrumb’s (or flour) job here is to absorb all the excess moisture and trap in inside the meatball.

I love Green chili, its my go to pepper. Its not as harsh as the others, but it is sure hot and spicy.

I also love to marinade my meat, mix all the spices with the meat, place in an airtight zip lock bag and freeze or refrigerate. It enhances the taste and makes the spices flourish on your taste buds

Ingredients

  • Minced beef (0.75 kg), Minced Chicken (0.75 kg), Minced Port or Mutton (0.5 kg)
  • Bread crumbs (1/3 cup) (Alternative: Normal Flour or Potato flour, both 1/4 cup)
  • Two eggs
  • Grated Cheese
  • Black pepper (1 tablespoon)
  • Chopped white Onion
  • Garlic(preferable powder)
  • Green chili
  • BBQ sauce
  • Beef stock cubes
  • Butter (2 tablespoons) or Canola oil (4 tablespoons) if you’re using an oven
  • Meat friendly spices (Cumin, Curry, Cilantro etc)
  • Salt

Instructions

  • Mix all meat properly, spread it flat in a bowl. Add everything except the egg and breadcrumbs.
  • Mix properly with a wooden spoon or a Masher.
  • Whisk the egg and pour into the mix. Mix it properly.
  • Add the breadcrumb or the alternative and mix properly
  • Roll into balls and place on a baking sheet
  • If you’re having problems rolling the meat, means there’s too much moisture in it. You can add little breadcrumbs to it. Not too much.
  • Broil in the oven at about 190 degrees Celsius for 35mins. Turn the balls then broil for another 10mins.
  • You want it a bit brown and a little brittle, but no too much especially if you want to still put it in sauces.
