I really don’t know what to name this dish. I made a mixture of both a Potato Hash and Frittata and it came out wonderful. It just happened to be one of those my creative moment. My friend, Taiwo gave it a funny name that I can’t remember at this point.

To summarize the dish, its Sauted (Stir-fried) Veggies, stirred fried with eggs, boiled potatoes and cheese. The base ingredient of a Frittata is Eggs. While for a hash, its mostly chopped potatoes or meat. The binder for both Dishes? the Cheese.
I’ve made this extra dish a lot, It helps when you have a lot of leftovers. You can throw in some meat (used Suya once) or veggies. Another example of my versatile dishes.
For this meal, I made BBQ Pork Ribs to go with it. Grilled with my very own homemade BBQ sauce i made from scratch (You have no idea how easy this is).


Ingredients
- 4 Large Irish Potatoes
- Bell Peppers (Green, Yellow, Red)
- Green and Red Chili
- Oil (I use Canola oil)
- Leeks
- Garlic
- Cheese
- Green Peas
- Sweet Corn (optional)
- 2 eggs
- Stock Cubes
- Black pepper
- Salt
- Light Soy Sauce
Directions
Sauce Pan Method
- Boil the Irish potatoes till they are almost done. Make sure it doesn’t break. You need it still firm but cooked all through. Strain dry and put aside.
- Now time for the Veggies. In a large sauce pan, heat up some oil then add the chopped Garlic(I add half of the stock cubes here to reduce the salt content, I don’t eat much salt). Let it sweat out for few minutes. (My personal method or trick to sauteing veggies is start from the hardest to softest.)
- Add the chopped Leeks and Chili. Cook for few minutes, then add the remaining chopped vegetables. Add (your desired) spices and cook for a few minutes. You don’t want to over cook the veggies, You don’t want them soggy. Deglaze (Fancy word for just pouring in soy sauce or (any liquid) and it steams up a little) with some Light Soy sauce.
- Add the Potatoes, gently fold the potatoes into the Stir fry veggies. You do not want the Potatoes to break
- Pour the whisk eggs in the cooking veggies and potato. Don’t stir. Use a wooden cooking spoon to create spaces for the the egg to sip down. Cook up the pot and let it cook.
- When you notice it’s almost done, add the shredded Cheese. As the egg is getting done, the cheese melts and evenly covers everything.
- If there is still some moisture, leave the sauce pan open so it can dried out. When it’s all done, its optional to stir or not (more presentable) this way
Ramekin or Baking Pan Method
- The only difference here is layer all the cooked ingredients (apart from the eggs)
- on a greased pan or Ramekin, You start with the Potatoes, then cooked veggies, then finally a mixture of eggs and cheese.
- Bake in an oven till the eggs are done (about 20 mins)
