Quick Eazy Mac & Cheese

Making Cheesy meals is quite hard down here because real good Cheese is quite expensive here. A good block of Mozzarella or Cheddar (not the ghetto versions) can cost about N2500. So this recipe is the best way to utilize cheese usage. The meal is going to come out all cheesy and gooey, don’t forget tasty.

Next time I make it, will coat the baking pan with Parmesan cheese (butter will make it stick). So the Mac & Cheese will come out hard but all soft on the inside. Thought about using breadcrumbs, will try that too.

Served with Ram Suya Stir Fry

Ingredients

  • Macaroni
  • shredded sharp Cheddar and mozzarella cheese (1 and half cup each)
  • 3 cups or milk or cream (Extra milk available in case of thickening)
  • 1/4 cup butter
  • 2 1/2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt

Directions

  1. Add pasta to already boiling salted water, cook for 10 mins or till Al Dente, drain and set aside.
  2. Now for the cheese sauce. Melt the butter in a sauce pan, then add the flour and stir continuously to prevent lumps. You just made a Roux (flour and fat cooked together and used to thicken sauces.)
  3. Continue stirring, when the Roux is almost browning, add half a cup of milk at interval as your stir. This will make it have a good consistency and no lumps. At this point, you should stir with a whisk.
  4. Add the cheese and salt and keep stirring till the cheese is completely melted and mixed with the Milk/Roux mixture. Cook for about 5-10mins, don’t forget, Keep stirring
  5. Now mix your boiled pasta with the cheese sauce and place into the baking pan.
  6. You can add extra cheese on top to before baking in the oven.
  7. Bake for 30mins uncovered.
  8. Let it cool for about 30mins before serving so it can be firm.

    Love the Mac and Cheese recipe. Tried it yesterday but with already grated cheese from SPAR 😔, so it wasn’t all that cheesy. Can you please do a post for Singapore noodles (vermicelli). I’ve tried cooking it three times but I’ve never succeeded at infusing flavor into the noodles itself. Maybe your recipe would help 🥺

      Hello.

      The cheese depends on the quantity and which kind of cheese you used. Try mixing both mozzarella and cheddar (you can get both for under N2000). Also try small quantities, you can make it in a mug or soup cup (ceramic) then cook in a microwave.

      For the Singapore Noodles, there are alot of ingredients I don’t have and I’m trying to get or find an alternative. When I do, I’ll post my own recipe. Pls subscribe to get updates.
